That's a spicy Meat-a-ball!

No not really, they are not spicy at all.

I got the recipe for these delicious little babies from Paula Deen's website. I adapted it a little bit to make it somewhat healthier. It was actually pretty easy. Here's what you need

1 lb. ground pork

2 eggs

1 1/2 cups bread crumbs

1/2 cup fresh chopped parsley

1 tsp. dried basil

1 tsp. dried oregano

Kosher salt to taste

fresh pepper to taste

fresh mozzarella cut into cubes

In a large mixing bowl, combine pork, eggs, parsley, basil, oregano, salt and pepper. Add the bread crumbs 1/2 cup at a time. Mix well until the meat mixture is dry and easily formed into a ball. (I used a large wooden spoon, but feel free to dive right in with your-clean-hands!) Form into balls and poke a hole in the top of each meatball with your finger, place a mozzarella cube in each meatball. Bake at 350 degrees for 30 minutes. Serve with angel hair pasta and your favorite sauce! YUMMO!
